I am not vegetarian but I respect those who are, and I understand their concerns. For this reason I grouped here all my recipes that are vegan or that can be easily converted without compromising the final taste.
For those recipes calling for guanciale or bacon (pork fat) or butter as condiment, substitute slightly increasing the quantity of extra-virgin olive oil. Substitute chicken/beef broth with vegetable stock when necessary. Regarding dessert I don’t feel like proposing any substitution. I don’t like to use margarine, I don’t like egg or milk substitutes. I will add to my recipe collection some simple vegan desserts (based mainly on fruit).

Many recipes of traditional Italian cuisine are perfectly vegetarian, and those that are not can be easily converted.
Definition of Vegetarian by the USDA (U.S. Department of Agriculture). There are several categories of vegetarians, all of whom avoid meat and/or animal products.
Vegan or total vegetarian diet includes only foods from plants: fruits, vegetables, legumes (dried beans and peas), grains, seeds, and nuts.
Lactovegetarian diet includes plant foods plus cheese and other dairy products.
Ovo-lactovegetarian (or lacto-ovovege-tarian) diet also includes eggs.
Semi-vegetarians do not eat red meat but include chicken and fish with plant foods, dairy products, and eggs.
