Pizza with Eggplant
Pizza con le Melanzane
prepare the basic pizza dough according to the recipe

** NOTE**
The temperature in the kitchen should be around  68–75  F (20–24 C) for the dough to rise properly.

Preheat oven to 500 F (260 C). Spread evenly the eggplant on the pizza dough.

Spread 2 tablespoon of olive oil on the pizza.

Top with the shredded mozzarella cheese.

Bake the pizza for approximately 20 - 25 minutes.  Lift one side to check for readiness. Pizza is ready when the bottom surface is light golden brown.

1 lb (1/2 kg) “Japanese” eggplant

2 tablespoons extra-virgin olive oil

1 garlic clove, chopped

pinch of crushed hot red chili pepper

salt

1 tablespoons Italian parsley, chopped
