topping for 1 pizza
prepare the basic pizza dough according to the recipe
6 – 7 tablespoons extra-virgin olive oil
1 little bunch of arugula leaves
2 oz (60 g) beef prosciutto, finely sliced
1 oz (30 g) aged parmigiano reggiano shavings
Preheat oven 500 F (260 C). Top the pizza with only 2-3 tablespoons extra-virgin olive oil. Bake the pizza for approximately 25 minutes or until thoroughly cooked but still very light brown and soft.
While the pizza is cooking, place the arugula in a bowl. Top with 2 – 3 tablespoons of extra-virgin olive oil and salt. Toss thoroughly.
Evenly spread the beef prosciutto slices over the pizza.
Top with the arugula.
Add the parmigiano shavings. Cheese shavings can easily be done with a vegetable peeler.
Serve immediately while the pizza is still warm.
