This is a simple recipe that my grandma used to make all the time. I later discovered that is also a typical dish from Bergamo. These pickles can be served as a side or as an appetizer.
2-3 tablespoons grated parmigiano cheese
1-2 tablespoons EVOO (extra-virgin olive oil)
Get some pickles. Choose them to be as plain as possible: no mustard seeds, no dill, no garlic, no nothing.
Slice the pickles thinly.
Arrange them on a dish.
Add grated parmesan (the cheesier the better).
Add olive oil.
Salt and pepper, and serve.
