Peaches in Chianti Wine (Pesche al Vino) is one of those perfect combinations of flavors, especially if the peaches are ripe and full of flavor, and if the wine is a young, fruity red Chianti.
Local red wine is used in Tuscany to marinate peaches. Simple and fresh, it is a perfect summer dessert.
4 large peaches, ripe and firm
half lemon juiced
3 tablespoon sugar
1 bottle young Chianti wine
Cut each peach in eight wedges. Place them in a bowl and add lemon and sugar. Mix gently and thoroughly. Set aside for 5 to 10 minutes.
Add enough Chianti wine to fully cover the peaches, approximately 3/4 of a bottle. Cover and place in the refrigerator for about 8 hours or overnight. Serve cold in individual cups or glasses.
