Most of the people in the food business attended the conference and some of the most prominent personalities were present: chefs, cooking teachers, and food writers. Among others Jaques Pepin, Nick Malgieri, and Marcella Hazan who was given the 2004 Lifetime Achievement Award.

During the gala dinner, the winners of the 2004 IACP Cookbook Awards were announced. Leading the list of honorees, Bittersweet: Recipes and Tales from a Life in Chocolate by Alice Medrich received the coveted IACP Cookbook of the Year Award.
