I love oranges, and Sicilian Orange Salad is an amazing dish as the orange in itself is an an amazing fruit. When in Winter most of the vegetables and fruits are brown green and dark the orange with its bright color brings light to our dishes. And do not forget the dark Red in the “blood oranges” Tarocchi of Sicily.
Orange salad is a very tasty and simple dish to propose also for the Christmas table. Many people that didn’t taste the orange salad are skeptics at first but most end up loving it. Adding fennel gives to the salad a crunchy and sweet taste, but Orange Salad can be done with just oranges or in any combination with fennel, olives and onions.
salt and pepper
3 – 4 tablespoons extra-virgin olive oil
3 oz (100 g) Sicilian olives (optional)
1 small onion, finely sliced (optional)
Slice the oranges and arrange them in a serving plate.
Clean the fennels, removing the base . . . .
. . . the outer tough leaves . .
. . . and the green stems.
Slice the fennel very thin. Transfer to a bowl.
Dress the fennel with extra-virgin olive oil, salt, and pepper.
Transfer the fennel to the serving dish. Drizzle with extra-virgin olive oil. Add olives and onion if desired.
