Green Beans with Onion
Fagiolini con la Cipolla
Add the green beans, salt and pepper, and sauté for about 5 minutes. Serve lukewarm.
1 lb (450 g) tender green beans
4 tablespoons extra-virgin olive oil
1 medium white onion, finely diced
salt and pepper
Wash the green beans and then clean them, eliminating the extremities.
Fill a stockpot with water and bring to a boil. Add a pinch of salt, the green beans, and boil for about 5 to 10 minutes, or until the green beans become tender. Drain in a colander.
Put the olive oil in a skillet, and turn the heat to medium. Add the onion and sauté until tender and translucent.
Tender small green beans and sweet white onion make a perfect combination for a simple
side dish that can accompany any preparation of meat or fish.
