Angel Hair Soup
Capellini in Brodo

Place the broth in a pot and bring to a boil. When the broth is at a fast boil drop the pasta.

1-1/2 quarts (1.5 liters) home made chicken broth  (substitute with organic store canned broth)
5 oz (150 gr) capellini (angel hair) fresh pasta (substitute dry store angel hair)
2 oz (60 gr) cup parmigiano reggiano cheese, freshly grated
pinch of nutmeg, freshly grated

Cook until the pasta is “al dente” (firm but not too soft or overcooked.) The angel hair will cook fast. Be careful not to overcook.


Transfer the soup to serving bowls, top with freshly grated parmigiano reggiano cheese, and freshly grated nutmeg.

Capellini in Brodo or Angel Hair Pasta in Chicken Broth is a very simple recipe that is not requiring any cooking skill. When you prepare fresh pasta you can cu some “Angel Hair - Capellini” (see how to do it at this link.) Using the home-made chicken broth in your refrigerator you can prepare a wonderful light and refreshing soup perfect for a simple winter dinner or as an opener for a holiday formal dinner. You can substitute the home made pasta and broth with excellent store brand organic chicken broth and dry angel hair noodles.

Dry angel hair pasta
